A Look at the Paso Robles Cabernet Icon, Daniel Daou

With summer on the horizon, celebrations for grads, and a day of honoring dads, June is a time for seeking truly great wines—everything from easy porch-sipping whites to bottles of bubbly to more sophisticated reds. For those looking to celebrate their fathers in a big way this year, look to Paso Robles’ PATRIMONY Estate, aptly named for a proud legacy built through heritage along the father’s side of the family.

PATRIMONY Estate

PATRIMONY Estate was established by the iconic Daou brothers of Daou Family Estates. As co-proprietors and makers, Georges and Daniel Daou bring their family history and legacy to the PATRIMONY Estate brand with incredible passion. The Daou name has become synonymous with world-class Bordeaux varietals and has helped put Paso Robles on the map for producing wines with immense quality and balance. Bottlings from the Daou name compete with the greatest Cabernet-growing regions around the world, including Bordeaux and Napa Valley.

Daou Mountain

The Daou Mountain, from which the PATRIMONY Estate wines hail, is located on the Central Coast in the Adelaida District of the Paso Robles winegrowing region. It’s a site that Daniel Daou selected for its chalky calcareous soils, matching that of Bordeaux’s soil composition, to craft the highest possible quality Bordeaux wines from California’s Central Coast. His dream as a young man, to become a winemaker, was fueled by motivation and passion. He avidly read wine books and collected wines, and made sure to seek the best possible location to carry out his dreams.

Daniel Daou

Unwavering Quality

The quality of PATRIMONY Estate wines is testament to the extreme focus that co-proprietor and winemaker Daniel has on every detail at the estate. He has crafted proprietary systems for planting structure and phenolics, with high vine density planting on steep slopes and grapes harvested with perfectly ripe phenolics; this ensures that he is able to priduce the most elevated expressions of Bordeaux grape varieties, rivaling First Growth Bordeaux Chateaux and the most cult bottles from Napa Valley.

His commitment to pure wines and his knowledge of science led him to cultivating hundreds of native yeasts from Daou Mountain, from which he isolated one that thrives in higher temperature fermentations and provides superior color stabilization. These traits have made the Daou Mountain yeast highly sought after and today, winemakers from more than 30 countries around the world use this yeast strain in their winemaking. In the cellar, Daniel initially used strictly 100% French oak barrels, but his innate drive to innovate led him to creating custom barrels from iconic French forests. He crafted two proprietary barrels: a five year bois rose barrel made from rare pink wood from pink trees and a Jupille forest barrel—both of which are now some of the rarest winemaking barrels in the world.

Putting Paso Robles Cabernet on the Map

When Daniel began crafting Bordeaux varietals from Paso Robles roughly ten years ago, no one knew the impact his presence would have in the world of fine wine. His relentless drive to craft such high quality Bordeaux wines from the Paso Robles winegrowing region landed him in the spotlight and raised the reputation and prestige of Paso Robles wines in their entirety. As the founder of the Paso Robles CAB Collective, Daniel remains committed to ensuring the highest standards for winegrowing and winemaking and works diligently to share his knowledge of crafting Bordeaux varietals in Paso Robles. He has been an icon in the region since his winemaking inception, and in that time, his craft and mentorship have helped quality and reputation across the region soar.

A Toast to Fathers Everywhere

Daniel has always been a hard-working man who honors his family legacy through all that he does. In the Daou collection of wine, the Soul of a Lion is named after his father and the Mayote is named after his mother. The entire PATRIMONY Estate brand is an homage to his father and his family heritage. The craftsmanship and unwavering quality, balance, and complexity of the PATRIMONY Estate wines make them more than fit for sophisticated, wine-loving dads this Father’s Day. These bottles honor fathers everywhere and are meant to be enjoyed in the good company of family.

PATRIMONY Estate 2018 Cabernet Sauvignon

The PATRIMONY Estate 2018 Cabernet Sauvignon is a highly aromatic wine with black cherry, cola, cedar, violet, and a touch of white pepper on the nose. The palate is luscious and balanced, full-bodied and unfolding in complex layers of plum, black cherry, hints of dried blueberry, and vanilla. It’s hard to pinpoint the most impressive part about this wine, because the texture is so seductive, the complexity so intriguing, and the length so undeniably long—it has everything going for it. This wine is a wonderful gift for the sophisticated, wine-loving dad this Father’s Day.
