For more than a decade, Chef Santos MacDonal and his wife and co-owner Carole MacDonal have drawn lovers of fine food to Il Cortile Ristorante at 608 12th Street in Paso Robles. Here, tantalizing Italian cuisine, freshly made pastas, locally sourced farm-fresh ingredients, a stellar wine list and first-rate service have beckoned locals and A-list foodies.
In the summer of 2013, Chef Santos and Carole opened a second business, La Cosecha Bar + Restaurant, at 835 12th Street. At this downtown location, the focus is on Spanish and South American flavors and craft cocktails. Chef Santos infuses his creations with Latin America-sourced spices, herbs and fruits that are reminiscent of his native Honduras.
Food and Drinks To-go
As the nation copes with a health crisis, both restaurants will remain closed for public seating, but Chef Santos and Carole remain busy at work preparing pick-up fare for their hungry guests at La Cosecha. From Wednesday through Sunday, from noon to 7 p.m., customers can place their food orders by calling (805) 237-0019. Credit card payments are preferred, which make for faster and more socially aware transactions.
“At La Cosecha, we’ve streamlined our operation, and everyone is wearing a mask. Our sanitizing protocol is applied in a measured and careful way, and there are six different spots for customers to pick up their food when they arrive. “It does feel kind of odd to stand six feet apart from one another,” said Carole. “We do a lot of waving to one another!”
“Our priorities have evolved over the past ten years,” said Carole. “As always, we strive to develop interesting, fun, and creative menus with the freshest ingredients possible. So, in addition to great food, wine and cocktails, service is what we’re known for. It’s about going above and beyond, and that’s what we’re trying to maintain.”
Two Menus to Choose From
Customers can select Il Cortile or La Cosecha menu items from the Carry Out menu or the Dinner Package menu. Salads, appetizers, pizzas, sandwiches and your favorite entrées can be picked up at La Cosecha, located just north of City Park in Paso Robles.
A sample of Chef Santos’s dishes includes ceviche, pork tacos, stone-fired pizzas, hamburgers, shrimp and linguica paella, moqueca (Brazilian seafood stew), fresh seafood of the day, pasta primavera, pasta pomodoro, his famous osso bucco, and more. A small assortment of gluten-free and vegetarian options is available, so kindly mention any special requests when ordering.
There are four Dinner Package options that feed four people. “Margarita, Margarita” provides four margarita cocktails, eight tacos, and one margarita pizza for $50. “Seafood Anyone?” contains four pan-seared crab cakes over a bed of seasonal vegetables and eight gambas with tomato guajillo sauce for $45. “Family Night” offers a scrumptious selection of three pulled pork sliders, three burgers, and three caprese sliders, your choice of one margarita-style or bianco pizza and four sangrias for just $35. Last, but not least, is the chef’s lasagna that feeds four with your choice of pasta or salad for $27. (“It’s the best lasagna I’ve ever eaten in my life!” said Carole.)
In addition to margaritas and sangrias to-go, any cocktail listed on the online cocktails menu is available for purchase. If you prefer wine added to your meal, Carole has you covered. Food and Friendships
Along with great food, it’s the relationships that sustain both staff and customers, who are like family.
“Once or twice a week, we see our regular customers and make their visits as special for them as possible,” Carole said. “Often, we’ll add something new or different to their order. Our philosophy has always been to provide all our customers a great experience – from the time they arrive until the time they leave – and we continue doing that today.”
“We’ve had employees who have been serving the same customers for ten years. Our newest person has been here for two or three years. Our staff is the heartbeat of our restaurant and I’m proud of them,” Carole said. “In fact, many of our regular customers like to see the same server for great conversation about food, wine, and to just have fun. We miss them! And we can’t wait to attract new customers, too.”
Carole is no stranger to providing delicious food and impeccable service, even in the toughest of times.
“More than a decade ago, we had our grand opening during a recession,” recalls Carole. “We’ve weathered tough times before and we’re going to move onward with the same resolve to get back to some semblance of normal and do so in a socially-responsible way,” said Carole. “We can never take anything for granted. We’re grateful for every person who walks through the door.
