Owner Douglas Ayres has merged artistry and artifacts reminiscent of his travels in South America, Asia and Europe to re-create the beauty and serenity of ancient spaces found throughout the world.
“People often enter ancient spaces and are in awe, but they don’t know why exactly,” said Ayres. “There are reasons, but most people just feel a sense of peace and joy. That’s what we want for the Allegretto. We want guests to feel connected to their space, to the past, and to one another, whether they understand the mechanics of it or not.”
A Sense of Direction
Rich in symbolism, the compass rose fountain at the entrance signifies the cardinal point from which to begin one’s journey. In the lobby, pulverized marble walls meet a fiber optic chandelier in view of the ceiling painted with seven-string lyres that represent heavenly awakening many wisdom traditions. A nearby cross-section of a fallen giant Sequoia provides the visible timeline of human and natural history. Within its rings include chronological references to the Great Wall of China, birth of Christ and two world wars.
Inside, a grand fireplace and twin staircases accented with black wrought iron and sculptural muses invite exploration. The fountain centered within the 12,000-square-foot Piazza Magica is natural river stone from China and represents the womb of creation and connectedness between heaven and earth. In the East Garden, the Romeo and Juliet Tunnel represents the unity of families joined by marriage.
Tailored landscaping, a stone fireplace and a cozy sitting area tempt visitors to linger for a glass and a chat in view of tiled roofs, plastered walls and mission-style arches. Other artistic highlights on the property include a five-foot stone polished to a beautiful sheen by river waters over 5,000 years, courtesy of a river in India, a towering Siddhartha statue and the Virgin of Guadalupe.
Cello Ristorante & Bar
Allegretto’s Cello Ristorante & Bar offers guests an upscale, yet unpretentious dining experience of Mediterranean dishes that reflect owner Douglas Ayres’ global travels. A graduate of the Culinary Institute in New York, Executive Chef Justin Picard creates delicious Northern Italian cuisine with ingredients sourced locally from local farmers and vendors and foraged from the chef’s own garden.
Farm-to-fork entrees plus gluten-free, vegetarian-friendly and vegan meal options can all be paired with Allegretto’s garden-to-glass craft cocktails, craft beers and wines from Paso Robles and throughout the world.
Spa at Allegretto
Your journey would not be complete without a visit to the Spa at Allegretto. Lovely treatment rooms, a detox sauna, a generous menu of treatments, including group fitness classes are available. Allegretto Vineyard Resort offers 171 European-inspired guestrooms and suites, 14-foot-high ceilings and private terrazzas. Custom Plush Dream Sleeper tops dressed in high thread count bedding will lull you to slumber.
